Soft Ring Cake with Almond Flour, Rice Flour, and Chocolate Chips

Beat the eggs with the sugar until the mixture becomes light and fluffy.
Add the extra virgin olive oil and mix well.

Gradually incorporate the almond flour, rice flour, potato starch, and baking powder, stirring until smooth.

Finally, fold in the dark chocolate chips.

Grease a cake pan with olive oil and dust it with rice flour.
Pour the batter into the prepared pan.

Bake in a preheated oven at 180°C (350°F) for 35–40 minutes.
Always perform the toothpick test to ensure the cake is fully baked.

Let it cool completely before removing it from the pan.
