Bresaola and Spinach Bundles

Wash and clean the spinach thoroughly.
In a small pan, heat the olive oil with a clove of garlic, then add the spinach.
Season with salt and pepper to taste and cook for about 5 minutes.

Lay out a slice of bresaola and place a small ball of spinach in the center, topped with a teaspoon of fresh cream cheese.
Fold the slice to form a small bundle, pressing gently so the bresaola sticks to the cheese and holds its shape.

Place the bundles on a serving plate and drizzle with a bit of extra virgin olive oil before serving.
